Planning to go for windsurfing vacation somewhere to Carribean (St Lucia, Aruba, Cayman...) Mexico, Costa Rica, Key West ...with family and small children. Any ideas where to rent gear, wind days, tips or good experience? Preferable nonstop flights from Chicago and some pool or shallow beach for children..Any information appreciated!

That's a big chunk of real estate with lots of places to choose from. I guess it depends on your ability, and whether your wife wants to "be a tourist" or just sit by the pool with the kids. Lake Arenal in Costa Rica is probably not the best beginners choice, but the surrounding area would be great for day trips. Cabo San Lucas is an easy travel destination. Aruba has great flat water. I'd start with Vela Windsurfing. They've been in business for years have tons of locations and always have good equipment ready to go. Good luck!
